Chocolate Chip Avocado Cookies
(Recipe modified from Good Housekeeping)
1 ¼ cups all –purpose flour (or you can substitute gluten free flour)
½ teaspoon baking soda
½ teaspoon salt
1 whole avocado
½ cup packed brown sugar
¼ cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 cup semisweet chocolate chips
1.Preheat oven to 375 degrees. In small bowl, with wire whisk, stir flour, backing soda and salt.
2. In large bowl, with mixer at medium speed, beat avocado and brown and granulated sugars until light and fluffy. Beat in egg and vanilla until well combined. Reduce speed to low; beat in flour mixture just until blended. With wooden spoon, stir in chocolate chips.
3. Drop dough by rounded tablespoons, 2 inches apart, on an ungreased cookie sheet. Bake 10 t0 12 minutes until golden around the edges. With a wide spatula, transfer the cookies to wire racks to cool completely. Repeat with remaining dough. Makes about 13 large cookies.
