Lexington shop prepares massive chocolate order

LEXINGTON, Va. (WDBJ7) If you think Santa’s elves are busy, you need to see the inside of the Cocoa Mill.

“We love it. It makes for so much fun,” says Cocoa Mill owner Laura de Maria.

But when you have an order for over 470 boxes of candy from just one client, it also makes for long-term fun.

“In August," DeMaria says, listing off the months they've worked on it,"September, October, November.”

“I have to make 429 individual pieces times however many individual pieces are in a boxes,” explains Mike Mayo, the chocolatier.

If you're not good at math, there’s something like 5,000 chocolates being packed up and shipped out as gifts from one corporate client.

“And a normal order," deMaria says, "A usual order for us would be like maybe one or two boxes.”

So it takes them four months to get it all made.

“But of course I can only do the things with a long shelf life then," says Mayo. "So I have to wait until a couple weeks before the order ships to do the things with a short shelf life.”

Like truffles or caramels.

“We have a system for this order, yes we do," DeMaria says, laughing. "It’s sort of fun, though, the feeling of the rush for the holidays. It’s a lot of fun.”

And they’re still doing regular business. But if you want a bunch of chocolate ...

“You need to let us know," DeMaria warns. "‘Cause we’re very busy as you can see.”
