Corn and Black Bean Salsa Salad
Makes 4-6 servings

•    1 can black beans, rinsed and drained
•    1 can corn, drained
•    1 red pepper, seeded and finely chopped
•    3 green onions, finely chopped
•    ½ bunch cilantro, chopped

Dressing
•    1 tsp cumin
•    4 tbsp lime juice
•    3 tbsp red wine vinegar
•    3 tbsp olive oil
•    Salt and pepper to taste

Mix the salad in a large bowl. Mix the dressing in a small bowl and toss into the salad.
*You can also add cooked brown rice or quinoa to this; just increase the amount of dressing you use.  Pair with the turkey burger below.

Makes 4 servings

• 16 oz lean ground turkey
• 1 egg
