Cheesy Bacon Potato Casserole Ingredients: 4 to 6 Large russet potatoes 1 Large sweet yellow onion, diced Salt and pepper to taste 1 Stick of unsalted butter 2 or 3 cups sharp cheddar cheese, shredded 12 ounces bacon, cooked crisp and chopped. 3 Large eggs, beaten Seasoning salt to taste 1 Cup heavy whipping cream Directions: Wash and bake potatoes until done. Cool completely; over night in the refrigerator is perfect. After cool, peel and dice potatoes. They do not need to be diced perfectly. Place in a large mixing bowl. Sauté diced onions in butter, with a little salt and pepper, until tender and add to the potatoes. Add the cheese, diced bacon, eggs, and seasoning salt. Pour in the cream and fold everything together. Pour into a greased casserole dish and bake 45 minutes to 1 hour. Feel free to add more cheese and extra bacon if you wish.
