"Kick It Up A Notch" Cornbread by Pat Myers
1 cup of self- rising cornmeal
½ tsp baking soda
¼ tsp salt
1 tsp garlic powder
1 ½ cups of shredded cheese
½ cup chopped onion
1 cup milk
3 large eggs, lightly beaten
1 (7 oz) can of whole kernel corn, drained
1 jar diced pimento
1 can chopped green chilies
6 slices bacon, cooked and crumbled
Combine the cornmeal, soda, salt and garlic power.
Stir in milk and the eggs.
Add the remaining ingredients and pour into a well- greased 10 inch cast iron skillet, or one that is oven safe.
Bake at 350 degrees for 45 minutes or until golden brown.
Serve with lots of butter.
Great as an accompaniment to a bowl of beans or chili.
