Did you miss this morning's Weekend Diner? Below is the recipe for Pat Myers' Loaded Baked Potato Salad.

Ingredients:
4 pounds of potatoes boiled with skins on until tender. 

4 ounces of soft butter1 cup of chopped green onion, including the tops

2 cups grated cheddar cheese

16 ounces of sour cream

1 tablespoon black pepper

1 teaspoon salt

Directions:
1. Cut cooled potatoes into small pieces, remove some of the skin but not all. 

2. Add the remaining ingredients and toss to combine. 

3. You can top with more cheese and green onions to garnish if you want.  

4. May be served hot or cold.
