Capturing the spirit
The job of an eau de vie distiller is a bit like the role of a photographer, says Lance Winters, master distiller at St. George Spirits. "You aim to capture the essence of something," he says. As a distiller of the category of fruit brandies known as eau de vie, Winters aims to capture the "soul and likeness" of his raw materials.
