You've got a television, some football-loving friends and a plan to watch the Super Bowl together. Now all you need is great party food.

This year, bet on a menu that sticks close to the classics by making chili the star attraction at a tasting party. We chose three chilis with distinct flavors to set up a competition as guests taste and choose a favorite. Cook them ahead (they freeze well) and save your game day labors for cutting fresh toppings and setting the scene.

Red chili (aka Red Menace)

Ingredients:
6 large dried ancho chilies
6 cloves garlic, peeled
2 tablespoons chili powder
2 teaspoons cumin seed
1 teaspoon ground coriander
1 1/2 teaspoons kosher salt
2 tablespoons honey
4 slices bacon, chopped
3 links spicy smoked sausage (such as andouille) cut into bite-size pieces
2 pounds boneless chuck roast, cut in 1-inch pieces
