Eric’s Chili
Recipe by: Joni Underwood2-16 oz cans Light Red Kidney Beans
2- 16 oz cans Dark Red Kidney Beans
2- 16 oz cans Pinto Beans
1 lb ground beef- browned & drained
1 Green Pepper- chopped
2- 16 oz cans of diced tomatoes
2- 16 oz cans of tomato sauce
1 Tbsp chili powder (or more if you like)
Dash of Black Pepper
1 Tbsp Worcestershire Sauce
1 tsp garlic powder
1 large crock pot
Combine all ingredients (including their juices) in large crock pot, making sure to mix all ingredients well. Cook on low for 8 hours.
Note: For the best flavor serve after the chili has had time to set for a day or more in the fridge. Served warm with shredded cheese and tortilla chips is a great way to make this recipe even better.
Pansy’s Easy Fudge

¾ cup butter
3 cups granulated sugar
2/3 cup evaporated milk
1 package (10 oz) semi- sweet chocolate chips
1 jar marshmallow crème
1 cup chopped nuts (your choice)
1 tsp vanilla flavoring
Mix sugar, butter, and milk in a medium saucepan. Bring to a full boil. Stir in the chocolate chips until melted. Remove from the heat and add remaining ingredients. Mix well. Pour into a greased 13x9 baking pan. Let set at room temperature until firm.
