Grated cheese (optional)
Cut a hole in the bread using the glass. Melt margarine in a skillet on medium heat. Place bread slice in the pan. Break an egg into the hole of the bread. The bread hole' you removed can be placed on the skillet as well. Cook for a few minutes until the egg looks done when a corner of the bread is lifted at the edge. Sprinkle with salt and pepper (or even grated cheese if you wish). Flip the bread and egg over and cook on the other side. Serve along with some fruit for a delicious meal!
Egg Salad in Ice Cream Cones
4 hard cooked eggs*, peeled
A? cup chopped celery
Salt and pepper
Mayonnaise (about A? cup)
Ice cream cones and Cherry tomatoes
Chop the eggs in a small bowl. Add the celery, some salt and pepper and just enough mayonnaise to moisten the eggs and stick everything together. Keep it covered and refrigerated until ready to eat. With an ice cream scoop or a spoon, place a mound of egg salad into each ice cream cone. Top each with a cherry tomato. Egg salad can also be spread on a hot dog bun, wrapped in a flour tortilla or stuffed into a pita pocket.
*To hard cook eggs: Lay eggs in a single layer in saucepan. Cover with water. Place lid on pan. Bring to a boil. Remove from heat. Set timer for 17 minutes. Pour off hot water and add cold water and ice to pan. Once cool, peel eggs by rolling eggs on a clean counter, cracking the shell, then start peeling from the large end. Rinse.
