Preheat Oven to 350 degrees. Spread the roll of sugar cookie dough on a greased pizza pan. Leave about a 1/2 inch perimeter between the crust and the edge of the pan. Bake for about 10-12 minutes until it is lightly golden brown. Remove and allow to cool. Mix the cream cheese and sugar together well. Then evenly spread the mixture on the crust. Start in the center and begin to layer your fruit outward. Make sure all fruit is well drained or it will saturate the crust and cause it to be soggy. Start with the cherries in the center, and then place a layer of peaches. Follow with a layer of crushed pineapple. Continue layering until you reach the outer edge. You can choose any fruits that you like. The fruit pizza can be cut in pizza-style slices, and it makes 8-10 servings.
