Heart Shaped French Toast Towers with Cranberry-Apple Compote and Goat Cheese

Directions for TWO servings:
Get the Cranberry Apple Compote going first; then make the French toast. While these are cooking, slice four very thin slices from a log of Goat cheese. Micro-warm cheese for 10 seconds warm 2 dinner plates in a 200A? oven. Once the French toast is cooked to perfection, place a spoonful of fruit compote in the center of each plate. Place one slice of French toast on each. Top each with 1 slice warmed Goat cheese (or Goat cheese crumbles); add another slice of French toast; more Goat cheese; and the last slice of French toast, keeping them all exactly centered on the others, making perfect heart shaped towers.
Top with more of the fruit compote and dust with powdered sugar (Maple syrup is optional). Enjoy with a glass of chilled champagne or a cup of steaming cappuccino.
Cranberry Apple Compote
2 small apples, cored and chopped into A?" pieces
1 cup fresh or frozen cranberries
2 tablespoons sugar
A? cup orange or lemon juice
1/8 teaspoon ginger (or 2 slivers of fresh ginger)
Combine ingredients in a small saucepan and heat, stirring occasionally until apples are soft when pierced (about 15 minutes). Serve warm or chilled. Makes 2 cups
French Toast
2 eggs
A? cup milk (non-fat half and half is more wonderful!)
4 teaspoons maple syrup
2/3 teaspoon cinnamon
Dash salt
Challah, Brioche, Hawaiian or Portuguese sweet bread
1 tablespoon unsweetened butter
Combine first five ingredients in a bowl. Mix well. Place in shallow dish.
Cut bread into A? inch slices.
With a heart shaped cookie cutter, cut out six hearts from the bread.
Melt butter in hot, large skillet over medium heat.
With kitchen tongs or a fork, dip each slice of bread into the egg batter, let soak for a few seconds then flip and let soak on the other side before placing in skillet. Cook for several minutes on first side, until crisp and gently browned; flip and cook on remaining side.

4 thin slices of Goat cheese or Goat cheese crumbles (warmed 10 sec. in microwave)
Powdered sugar
