Mandarin Orange Salad
Recipe by: Joyce Gordon (given to her by Diana Morris)
Salad:
Spinach leaves
Romaine Lettuce
1 bunch of green onions (chopped)
Grape tomatoes
3 stalks of celery (chopped)
Cucumber (slice cucumbers, then slice into match stick pieces)
1 can Mandarin oranges (drained)
Salt and pepper to taste
In skillet: 1 small pkg of slivered almonds (or pecans) 2 Tbsp. of sugar, warm over medium heat until toasted, stirring constantly, and remove promptly and add to salad.
Dressing:
1/3 cup of sugar, 1/3 cup of vinegar, 1/3 cup of oil ( your choice of oil) warm till sugar melts, cool and pour over the salad just before serving.
Mix vegetables and spinach and lettuce, add pecans and oranges right before dressing, garnish with more tomatoes and red onion rings.
