Seared Jumbo Scallops
1-2 Tbsp Shallot
1-2 Tbsp Garlic
2 Tbsp Parsley
1 Tbsp Salt (kosher)
A? c Grated Parmesan Cheese
1 oz. Armagnac Brandy
A? c Heavy Cream
3 ea u 10 Scallops
1 tbsp grapeseed oil
heat oil in pan to smoke point
add scallops and sear on one side
turn scallops and deglaze with the brandy away from the heat
return pan to heat (careful of flame)
add the shallot, garlic, parmesan, parsley, salt, and cream
bring to a boil and remove scallops
reduce sauce
pour back over the scallops and gratinee under the broiler.
