Ingredients:
- 1 ½ cup grated potato
- 1 cup all purpose flour
- 1 cup cooled mashed potato
- 1 large egg
- 1 tbl skimmed milk
- ¼ cup olive oil
- Salt & pepper to taste
Place grated potato, all-purpose flour, cooled mashed potato in large mixing bowl. In a second mixing bowl, combine large egg and skimmed milk. Wisk egg/milk mixture, adding salt and pepper to taste. Heat a medium sized sautee pan, adding olive oil. Make boxty mix into 2-inch diameter cakes, flatten and place in pan. Brown cakes on both sides.
Irish Jig Dessert
Ingredients:
- 1 cup coconut macaroons
- 2 cups heavy whipping
- 2 tbl Irish whiskey
- 2 tbl sugar
- 1 tsp confectioner's sugar
- ½ tsp vanilla extract
Crush and set aside macaroons. Place heavy whipping cream in chilled mixing bowl, begin whipping. Add sugar, confectioner's sugar and vanilla extract to whipped cream. Fold 3/4 c. crushed macaroons into whipped cream, and spoon mixture into serving vessel. Sprinkle remaining macaroons over the top of the mixture and serve immediately. Makes 6-8 servings.
