Marinated Vegetable Salad on the Weekend Diner
Marinated Vegetable Salad
1 can small green peas (drained)
1 can French Style Green beans(drained)
1 can shoe peg corn (drained)
1/2 Cup of chopped onion
1/2 Cup of chopped green pepper
1/2 Cup of Chopped celery
1 sm jar of pimentos, or some chopped red pepper
Mix together 1/4 cup olive oil, 1/2 cup vinegar, 1 cup sugar, and 1 tsp salt. Pour over vegetables and chill for several hours or over night for best flavor.
Wonderful for Summer cookouts.
