Jean Scanlon of Johnstown makes cornish game hens with a unique and savory wild rice stuffing.
The unusual stuffing consists of wild rice, sauted onions, peppers and mushrooms, and crushed pineapple.
It's healthy, delicious meal that can be served with mashed potatoes and vegetables.
Cornish Game Hens with Wild Rice Stuffing

Wild Rice Stuffing:
3 cups wild rice
3/4 cup butter or margarine
1/2 cup chopped onion
1/4 cup diced green pepper
1 1/3 cup diced mushrooms
1 cup drained crushed pineapple
Salt and pepper to taste
Fix rice first according to box directions. In a skillet, saute butter, onions, green pepper and mushrooms. Remove from heat and add pineapple and wild rice. Stuff cornish hens. Makes approximately 7 cornish hens. Bake at 375 degrees for about 2 hours.
