There's nothing like warm fresh baked cookies on a bad winter day.
1/2 cup of softened butter
1 cup of granulated sugar
1 cup of packed brown sugar
1 teaspoon of baking powder
1/2 teaspoon of baking soda
1/2 teaspoon of salt
2 eggs
2 teaspoons of vanilla
2 cups of flour
3/4 cup of chopped salted, roasted cashews
2/3 cup of butterscotch chips
Preheat oven to 375.
In a large mixing bowl, beat butter, sugars, baking powder, baking soda and salt. Mix until butter and other ingredients are creamed together.
Add eggs and vanilla and beat until combined.
Beat in as much flour as possible with mixer. Using a wooden spoon, stir in any remaining flour.
Stir in cashews and butterscotch pieces.
Drop dough by rounded teaspoons two inches apart on an ungreased cookie sheet.
Bake 8-10 minutes or until edges are lightly browned.
Allow to cool recipe.
Serves 12-24.
