Polpettina Homestyle Pizza Kitchen, a new Eastchester restaurant focused on organic, locally sourced Italian Influenced New American cuisine. Kyle Inserra and Mike Abruzese showed us how to make a super simple Tomato Basil Sauce and use it on three different dishes.
Tomato Basil Sauce Recipe
1 Can of Crushed San Marzano Tomatoes
1 Bunch of Rough Chopped Basil
2 Medium Spanish Onion Diced
4 TBSP Vegetable Oil
Extra: Kosher Salt and Pepper
- Sweat the onions in a large Rondeau.
- When the onions are translucent add the basil.
- Cook Basil for 3 minutes and then add tomatoes.
- Bring to a simmer.
- Cook and skim for approximately 30 minutes.
- Add Pecorino
- Season as needed and use immediately or transfer to tupperware containers and label/date & freeze for later use.
Polpettina (Italian for "Little Meatball") was opened in March 2011 by two young guys who care about keeping things local and who were looking to bring a better way of eating to their community. With a recent expansion that now includes the new Polpettina Market, they offer a Blue Bottle Organic Coffee Bar and shelves upon shelves of homemade soups, sauces and pickles for purchase.
