So what do nearly 100 football players eat three, plus times a day. nat Inside the kitchen at the Greenbrier, Executive Chef Brian Skelding is getting things in order to feed the New Orlenas Saints through mid-August. nat: are there sliders tonight? Skelding is working closely with Jennifer Gibson, the clubs nutritionist who's got a specific diet for these burly athletes. Which forces cooks to pay extra attention to detail. Brian Skelding: i have to be.. We love butter here and she doesn't like a lot of butter. Even cream.. We stay away from cream. a lot of lean meats We're doing a lot of boneless, skinless chicken breasts. But it's not all strict... They are allowed to have some food that doesn't necessarily fit with their nutrition plan. Skelding: We do some cheat days.. So we're doing a buffalo wing day and we actually just ordered four- thousand chicken wings... Just to make sure we have enough. And those four- thousand chicken wings aren't even a main course, that's the Saints late night snack... Skelding: I'm being dead serious... It's a snack. It's a late dinner.. to me it's not really a snack it's really a late dinner but yeah, four thousand chicken wings and that's based off 165 gentlemen eating two dozen wings. For athletes who burn thousands of calories every day, it's important to replenish as this time of year is all preparation for a 17 week regular nfl season. Sean Payton: We're getting ready for football shape, Which is carrying your pads, carrying all that equipment... and getting used to it and playing with it and so there's always a little bit more conditioning. We're sitting at 160 cooks over the entire hotel so it's a huge team and I'm nothing without the team and it doesn't matter what's on your jacket everyone is so crucial to every little detail.
